This Nicaragua is great example of what Nicaragua has to offer. Central American coffees are renowned for bright acidity and varied nuance. This coffee should be a pleasure to pair with foods such as fruit pies and shortbread cookies where the character can be both matched, and showcased. A fine acidity also makes this perfect as a very special cup.

Origin Notes
On the fertile hills outside of Matagalpa, Daniel and Mercedes Collins, produce this coffee on the La Epifania family farm that encompasses 18 hectares of volcanic mountain soil and lush jungle flora and fauna. Growing at an altitude over 1022 meters above sea level.
The trees grow under a diverse tree canopy. Shade-grown, farming will result in rich soil with beneficial leaf litter as well as encourage indigenous species in the growing region. These practices are important for the continued success of the farm and its high standards of quality. This coffee was processed in the tradition of the region- washed and sorted by grade then raked and sun-dried on cement patios.
We have roasted the Nicaragua Epifania Estate to Full City in order to enhance its sweetest attributes.

Notes of baker's chocolate, sweet brown sugar and a crisp fruity finish.
