Notes on Mexico
Folklore and tradition is alive and well in the highlands of Mexico's Southern Sierra Madre mountain range. The altitude and volcanic soil of the region create the best conditions for this coffee. A great Mexican coffee, is bright and light.
This coffee is roasted close to a Full City to accentuate its brown-sugared, cocoa notes. We like this coffee black as a breakfast coffee. It prepares well in any filter slow-brew process, and can bloom a bit when milk and sweeteners are added.
Origin Notes
The culture and traditions and growing techniques have been passed down through generations. The farmers that work this land are almost entirely indigenous peoples of Mache, Tzotzi, Tojolaba, Jacaleco, and Tzeltal origins. Mexican coffee is traditionally processed in the wet method, where the fruit of the cherry is removed and the sticky sugars are thoroughly washed from the parchment. Processing a high-grown coffee this way endures a clean and bright cup quality.
Cupping Notes
Clean and high in acidity, smooth but delicate body. Notes of chocolate with a long sweet finish.
